Finding the best thick crusted, topping packed pizza in town was a must for Birthdays and special events. Pile high the cheese, meat, and veggies and, of course, the sauce on top was the only way to go. But making our own\u2014that always seemed downright impossible!<\/p>\n<p class=\"wp-block-paragraph\">Fast forward to about 7 years ago and we decided to begin incorporating sourdough into our family\u2019s routine. It started pretty basic\u2014loaves of sourdough bread, and basic pan pizza.<\/p>\n<p class=\"wp-block-paragraph\">Eventually, we asked, \u201cWhy can\u2019t we make our own sourdough deep dish pizza?\u201d With a little experimentation, this amazing sourdough deep dish pizza recipe was born.<\/p>\n<p class=\"wp-block-paragraph\">It now makes an appearance every weekend for our family pizza night and there are smiles all around every time it pops out of the oven.<\/p>\n<p class=\"wp-block-paragraph\">So get your cast iron skillet ready, it\u2019s pizza time!<\/p>\n<h2 class=\"wp-block-heading\">The History of Chicago-Style Deep-Dish Pizza<\/h2>\n<p class=\"wp-block-paragraph\">Many Italians immigrated to Chicago in the late 19th and early 20th centuries in search of factory jobs. They brought with them their love for pizza. Ike Sewell and Ric Riccardo were two of these Italian men who decided to begin experimenting to create something unique that blended their Italian heritage and their new American traditions. Because of the density of the pizza, it needed to be cooked longer. But, to keep the cheese from burning, they put the cheese on the bottom, added meat and veggies, and finished it off with a layer of tomato sauce, giving rise to this Chicago tradition.<\/p>\n<h2 class=\"wp-block-heading\">Why Make Sourdough Pizza?<\/h2>\n<p class=\"wp-block-paragraph\">There are many reasons to opt for traditionally prepared sourdough as opposed to the more modern quick yeasts and refined flours.<\/p>\n<p class=\"wp-block-paragraph\"><strong>1. Easier to Digest.<\/strong> Sourdough is made through a slow fermentation process which breaks down many of the plant compounds that are difficult for the body to digest.<\/p>\n<p class=\"wp-block-paragraph\"><strong>2. Blood Sugar Balance.<\/strong> Because of the fermentation process and high fiber content in sourdough, the body responds differently to it than with modern, commercially made bread products. More nutritious.<\/strong> Because sourdough breaks down the phytic acid\u2014a naturally occurring compound in grains that is difficult to digest\u2014it causes an increase in bioavailable vitamins and minerals making it more nutritious.<\/p>\n<h2 class=\"wp-block-heading\">Making the Perfect Deep Dish Crust<\/h2>\n<p class=\"wp-block-paragraph\">This recipe makes a thick crust with crispy edges that are gooey and dense on the inside. The honey adds a delightful amount of natural sweetness.<\/p>\n<p class=\"wp-block-paragraph\">This pizza is best made in a cast iron skillet. The rim helps give the crust its distinct deep dish form allowing for a thick layer of toppings. It can be made on a pizza stone, however, you\u2019ll want to add lots of flour for a firm crust. Our preference is to use a 50\/50 blend of Einkorn flour and Glenn flour (a hard spring wheat). Add fat to 12\u201d cast iron pan and place in oven to preheat at 450\u00b0F (230\u00b0C).<\/p>\n<p class=\"wp-block-paragraph\" style=\"font-size:22px\">2. Start with 1.5 cups of flour in large mixing bowl. Add starter, water, olive oil, honey, and salt. Mix.<\/p>\n<p class=\"wp-block-paragraph\" style=\"font-size:22px\">3. Once stirred, continue to mix in a \u00bd cup of flour at a time. Stop once the dough is moist but not too tacky to handle.<\/p>\n<p class=\"wp-block-paragraph\" style=\"font-size:22px\">4. Place dough on a floured surface and knead 5-7 minutes until a smooth ball of dough is formed.&nbsp;<\/p>\n<p class=\"wp-block-paragraph\" style=\"font-size:22px\">5. Lightly coat the dough ball in olive oil (If freezing dough, see section below on how to freeze dough balls).<\/p>\n<p class=\"wp-block-paragraph\" style=\"font-size:22px\">6. If baking fresh, place dough ball back in large bowl and allow to rise at least 30 minutes* before baking.<\/p>\n<p class=\"wp-block-paragraph\" style=\"font-size:22px\">7. For fresh eating, remove preheated cast iron pan from oven. Spread cooking fat around bottom and sides of pan.<\/p>\n<p class=\"wp-block-paragraph\" style=\"font-size:22px\">8. Remove skillet from oven and make sure bottom and sides of pan are coated in fat. Place ball of dough in preheated skillet. Spread dough by hand working it down and outward. Make sure dough is spread evenly along the bottom with extra dough around the rim. Form crust roughly 1\u201d up the edges of the pan. Note, dough will rise while baking.<\/p>\n<p class=\"wp-block-paragraph\" style=\"font-size:22px\">9. Use a fork to poke holes in dough every inch across bottom of crust. Prebake crust for 4-5 minutes.<\/p>\n<p class=\"wp-block-paragraph\" style=\"font-size:22px\">10. Top pizza** and bake at 450\u00b0F for 15-20 minutes until crust is golden brown and pizza is cooked through. Let sit 5 minutes before serving.&nbsp;<\/p>\n<p class=\"wp-block-paragraph\">*We usually bake the pizza crust soon after making, but you can proof the dough in a covered bowl for 6-8 hours or until doubled for added fermentation.<\/p>\n<p class=\"wp-block-paragraph\">**Room temperature toppings give the best results. See how we top our Chicago-style pizza below.<\/p>\n<h2 class=\"wp-block-heading\">How We Make Our Chicago-Style Pizza<\/h2>\n<p class=\"wp-block-paragraph\">A true Chicago-style pizza always has the pizza sauce on top. But what\u2019s below the sauce is up to you! Here are our family\u2019s favorite toppings:<\/p>\n<p class=\"wp-block-paragraph\"><strong>Pesto Layer &#8211;<\/strong> We start with a layer of <a href=\"https:\/\/fromscratchfarmstead.com\/quick-and-easy-pesto-in-a-blender-without-dairy\/\" target=\"_blank\" rel=\"noreferrer noopener\">homemade pesto<\/a> on the bottom! But we also like to shred up a wedge of our homemade <a href=\"https:\/\/fromscratchfarmstead.com\/easy-farmhouse-cheddar-hard-cheese-recipe\/\" target=\"_blank\" rel=\"noreferrer noopener\">farmhouse cheddar<\/a> for the added taste and texture.&nbsp;<\/p>\n<p class=\"has-theme-palette-8-background-color has-background wp-block-paragraph\"><em>With whatever cheese you buy, make sure you don\u2019t use pre-shredded. Cheeses that come pre-shredded contain added anti-caking agents so they don\u2019t melt as well. It\u2019s well worth the extra few minutes to buy a block of cheese and pull out that grater!<\/em><\/p>\n<p class=\"wp-block-paragraph\"><strong>Meat Layer &#8211;<\/strong> Nothing says Chicago-style deep dish like sausage! That\u2019s what our family typically uses. But pepperoni or whatever your protein of choice will also do!<\/p>\n<p class=\"wp-block-paragraph\"><strong>Veggies Layer &#8211;<\/strong> Between the pesto and tomato sauce layer, we typically don\u2019t add additional veggies. But toss in what you like!<\/p>\n<p class=\"wp-block-paragraph\"><strong>Sauce Layer &#8211;<\/strong> Any tomato or pizza sauce will do\u2014as long as it\u2019s on top! The above recipe is very easy to scale up for making larger batches at a time.<\/p>\n<p class=\"wp-block-paragraph\">To freeze, we first lightly coat the outside of each dough ball in olive oil, then place each crust in a quart-sized, freezer-safe ziplock bag. Add starter, water, olive oil, honey, and salt. Mix.<\/li>\n<li data-step-index=\"2\" id=\"mv_create_19_3\">Once stirred, continue to mix in a \u00bd cup of flour at a time. Stop once the dough is moist but not too tacky to handle.<\/li>\n<li data-step-index=\"3\" id=\"mv_create_19_4\">Place dough on a floured surface and knead 5-7 minutes until a smooth ball of dough is formed.<\/li>\n<li data-step-index=\"4\" id=\"mv_create_19_5\">Lightly coat the dough ball in olive oil (If freezing dough, see section below on how to freeze dough balls).<\/li>\n<li data-step-index=\"5\" id=\"mv_create_19_6\">If baking fresh, place dough ball back in large bowl and allow to rise at least 30 minutes* before baking.<\/li>\n<li data-step-index=\"6\" id=\"mv_create_19_7\">For fresh eating, remove preheated cast iron pan from oven. Spread cooking fat around bottom and sides of pan.<\/li>\n<li data-step-index=\"7\" id=\"mv_create_19_8\">Remove skillet from oven and make sure bottom and sides of pan are coated in fat. Place ball of dough in preheated skillet. Spread dough by hand working it down and outward. Make sure dough is spread evenly along the bottom with extra dough around the rim. Form crust roughly 1\u201d up the edges of the pan. Note, dough will rise while baking.<\/li>\n<li data-step-index=\"8\" id=\"mv_create_19_9\">Use a fork to poke holes in dough every inch across bottom of crust. Prebake crust for 4-5 minutes.<\/li>\n<li data-step-index=\"9\" id=\"mv_create_19_10\">Top pizza** and bake at 450\u00b0F (230\u00b0C) for 15-20 minutes until crust is golden brown and pizza is cooked through.
