We love this recipe and I knew I wanted to try making more variations of oatmeal pancakes. A pumpkin version was the first that came to mind.&nbsp;<\/p>\n<p class=\"wp-block-paragraph\">I\u2019m so glad I did because these oatmeal pumpkin pancakes do not disappoint! And while this is most commonly served at our breakfast table, these are so hearty that we\u2019ve been known to have these pumpkin pancakes for lunch or dinner as well.<\/p>\n<h2 class=\"wp-block-heading\">Oatmeal Pumpkin Pancakes Ingredients &amp; Swaps<\/h2>\n<p class=\"wp-block-paragraph\"><strong>Oats \u2013<\/strong> I like to buy <a href=\"https:\/\/amzn.to\/3Ea9JRd\" target=\"_blank\" rel=\"noopener\">One Degree<\/a> gluten and glyphosate free oats from Costco for this recipe. Our favorite way to do this is by baking a whole, seeded butternut squash at 375\u00b0F for 45 min \u2013 1 hour. This helps make sure the insides get fully cooked without burning the outsides and makes a perfect fluffy pancake.<\/p>\n<p class=\"wp-block-paragraph\">Once they are fully cooked on the bottom and bubbling slightly on top, flip the pancakes.
