Soups are a great way to do that. We love homemade chicken pot pie but we\u2019ve found it\u2019s equally as good and stretches further if we instead make it into a creamy chicken soup and serve it alongside these easy <a href=\"https:\/\/fromscratchfarmstead.com\/easy-drop-yogurt-biscuits\/\" target=\"_blank\" rel=\"noreferrer noopener\">yogurt biscuits<\/a>.<\/p>\n<h2 class=\"wp-block-heading\">Creamy Chicken and Potato Soup Ingredients and Substitutions<\/h2>\n<p class=\"wp-block-paragraph\">The great thing about soups is that they are so versatile and this creamy chicken and potato soup is no exception. My goal in creating this recipe was to create a soup version of chicken pot pie filling but you are always welcome to experiment and tweak the recipe for your preferences.<\/p>\n<p class=\"wp-block-paragraph\">The recipe below is exactly as I make it but I\u2019ve also included some substitute options as well.<\/p>\n<p class=\"wp-block-paragraph\"><strong>What\u2019s Needed:<\/strong><\/p>\n<p class=\"wp-block-paragraph\"><strong>Garlic \u2013<\/strong> We grow a lot of garlic each year so we always have plenty of fresh garlic on hand but you could substitute dried garlic if needed.<\/p>\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"800\" src=\"https:\/\/fromscratchfarmstead.com\/wp-content\/uploads\/2024\/11\/creamy-chicken-and-potato-soup.jpg\" alt=\"creamy chicken and potato soup\" class=\"wp-image-83496\" srcset=\"https:\/\/fromscratchfarmstead.com\/wp-content\/uploads\/2024\/11\/creamy-chicken-and-potato-soup.jpg 1200w, https:\/\/fromscratchfarmstead.com\/wp-content\/uploads\/2024\/11\/creamy-chicken-and-potato-soup-300x200.jpg 300w, https:\/\/fromscratchfarmstead.com\/wp-content\/uploads\/2024\/11\/creamy-chicken-and-potato-soup-1024x683.jpg 1024w, https:\/\/fromscratchfarmstead.com\/wp-content\/uploads\/2024\/11\/creamy-chicken-and-potato-soup-768x512.jpg 768w\" sizes=\"auto, (max-width: 1200px) 100vw, 1200px\" \/><\/figure>\n<p class=\"wp-block-paragraph\"><strong>Onion \u2013<\/strong> The base of every good soup recipe!<\/p>\n<p class=\"wp-block-paragraph\"><strong>Potatoes \u2013<\/strong> Red or yellow potatoes are our favorite to use in soups because they tend to hold their shape way better than russets or white potatoes that can more easily become mushy.<\/p>\n<p class=\"wp-block-paragraph\"><strong>Carrots \u2013<\/strong> Perfect for adding both flavor and color to this soup.<\/p>\n<p class=\"wp-block-paragraph\"><strong>Cooking Fat \u2013<\/strong> My favorite is butter but lard, coconut oil or any other heat stable cooking fat will work.<\/p>\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"800\" src=\"https:\/\/fromscratchfarmstead.com\/wp-content\/uploads\/2024\/11\/creamy-chicken-potato-soup-with-biscuit.jpg\" alt=\"creamy chicken potato soup with biscuit\" class=\"wp-image-83500\" srcset=\"https:\/\/fromscratchfarmstead.com\/wp-content\/uploads\/2024\/11\/creamy-chicken-potato-soup-with-biscuit.jpg 1200w, https:\/\/fromscratchfarmstead.com\/wp-content\/uploads\/2024\/11\/creamy-chicken-potato-soup-with-biscuit-300x200.jpg 300w, https:\/\/fromscratchfarmstead.com\/wp-content\/uploads\/2024\/11\/creamy-chicken-potato-soup-with-biscuit-1024x683.jpg 1024w, https:\/\/fromscratchfarmstead.com\/wp-content\/uploads\/2024\/11\/creamy-chicken-potato-soup-with-biscuit-768x512.jpg 768w\" sizes=\"auto, (max-width: 1200px) 100vw, 1200px\" \/><\/figure>\n<p class=\"wp-block-paragraph\"><strong>Chicken Broth \u2013<\/strong> Our favorite broth is made alongside <a href=\"https:\/\/fromscratchfarmstead.com\/how-to-slow-cook-a-whole-chicken-in-the-oven\/\" target=\"_blank\" rel=\"noreferrer noopener\">slow cooking a whole chicken<\/a> each week and this flavorful broth helps to create the great flavor of this creamy chicken soup recipe. Substituting veggie broth or even water would work too but doesn\u2019t have the same depth of flavor as chicken broth in my opinion.<\/p>\n<p class=\"wp-block-paragraph\"><strong>Tapioca Starch \u2013<\/strong> This is used to make a roux and thicken the soup to give it that creamy consistency. Tapioca starch is my favorite gluten free option that I buy in bulk at <a href=\"https:\/\/www.azurestandard.com\/shop\/product\/food\/baking-pantry\/tapioca\/starch\/tapioca-starch-organic\/11169?package=BP177&amp;a_aid=1VhF2IHeYI\" target=\"_blank\" rel=\"noreferrer noopener\">Azure Standard<\/a> but you could use standard flour as a thickener here instead.<\/p>\n<p class=\"wp-block-paragraph\"><strong>Chicken \u2013<\/strong> Creamy chicken and potato soup is a great way to use up that leftover shredded chicken after cooking a whole chicken but any cooked chicken will work. Coconut milk is what I would substitute for a dairy free alternative.<\/p>\n<p class=\"wp-block-paragraph\"><strong>Sea Salt<\/strong><\/p>\n<p class=\"wp-block-paragraph\"><strong>Italian Seasonings or other herbs of choice<\/strong><\/p>\n<p class=\"wp-block-paragraph\"><strong>Dried Nettle or Kale (optional) \u2013<\/strong> We always dry out a ton of <a href=\"https:\/\/fromscratchfarmstead.com\/how-to-preserve-nettle\/\" target=\"_blank\" rel=\"noreferrer noopener\">nettle<\/a> or <a href=\"https:\/\/fromscratchfarmstead.com\/how-to-make-kale-powder-with-or-without-a-dehydrator\/\" target=\"_blank\" rel=\"noreferrer noopener\">kale<\/a> each growing season to preserve to use all winter and I love the color and added nutrition that it adds to soups but it\u2019s completely optional in this recipe.<\/p>\n<h2 class=\"wp-block-heading\">How to Make Creamy Chicken and Potato Soup<\/h2>\n<p class=\"wp-block-paragraph\">The most time-consuming part of making soup, is prepping all of the vegetables. I like to chop them all at the beginning so that getting the soup together is a breeze.<\/p>\n<p class=\"wp-block-paragraph\">After all the veggies are chopped, warm up the cooking fat on medium to high heat in a stock pot or dutch oven. I like to check on it every couple of minutes and give it a stir to make sure nothing is sticking to the bottom of the pan. After veggies are chopped, heat butter or cooking fat in a stock pot or Dutch oven over medium-high heat.<\/p>\n<p>2. Saut\u00e9 garlic and onion until soft and aromatic.<\/p>\n<p>3. Mix in tapioca starch or other thickener.<\/p>\n<p>4. Once the thickener is completely mixed in, slowly add chicken broth, mixing or whisking continuously.<\/p>\n<p>5. Bring the mixture to a light boil until it begins to thicken. After the broth mixture thickens, reduce heat to a simmer.<\/p>\n<p>6. Add the potatoes and carrots.<\/p>\n<p>7. Mix everything together and keeping at a simmer, cover the pot for about 20-30 minutes. I like to check on it and stir every few minutes.<\/p>\n<p>8. Once the potatoes and carrots are soft, mix in the rest of the ingredients (chicken, milk or cream, salt, seasonings, and dried greens if using).<\/p>\n<p>9. After the broth mixture thickens, reduce heat to a simmer.&#8232;<\/li>\n<li data-step-index=\"5\" id=\"mv_create_112_6\">Add the potatoes and carrots.&#8232;<\/li>\n<li data-step-index=\"6\" id=\"mv_create_112_7\">Mix everything together and keeping at a simmer, cover the pot for about 20-30 minutes.
