And by a lot, I\u2019m talking several hundreds of pounds. They are a staple for us all winter long and well into the spring along with other <a href=\"https:\/\/fromscratchfarmstead.com\/10-essential-storage-crops-you-need-to-grow\/\" target=\"_blank\" rel=\"noreferrer noopener\">storage crops<\/a>. Those potatoes get mashed and turned into <a href=\"https:\/\/fromscratchfarmstead.com\/cast-iron-gluten-free-latkes\/\" target=\"_blank\" rel=\"noreferrer noopener\">potato pancakes<\/a>, are roasted as a side, or are the perfect addition to one pot soups, stews, and casseroles.<\/p>\n<p class=\"wp-block-paragraph\">This creamy potato sausage soup is a weeknight favorite in our house but it\u2019s also perfect for scaling up to serve a crowd.<\/p>\n<h2 class=\"wp-block-heading\">Creamy Potato Soup with Sausage \u2013 The Ingredients<\/h2>\n<p class=\"wp-block-paragraph\">Soups are wonderful because they are flexible and forgiving. I\u2019m going to share exactly how I made this recipe, but feel free to use what you have, make substitutions and personalize your soup. They tend to be a bit hardier and hold their shape better in a soup. But you could also substitute lard, coconut oil, or other cooking fat of choice.<\/p>\n<p class=\"wp-block-paragraph\"><strong>Tapioca Starch, Arrowroot Starch, or AP Flour \u2013<\/strong> This is used as your thickener to give your potato sausage soup that creamy texture. I usually use <a href=\"https:\/\/amzn.to\/4guNX9r\" target=\"_blank\" rel=\"noreferrer noopener\">tapioca<\/a> or <a href=\"https:\/\/amzn.to\/3TEXLnA\" target=\"_blank\" rel=\"noreferrer noopener\">arrowroot starch<\/a> because they are a great gluten free option but regular flour would work as well.<\/p>\n<p class=\"wp-block-paragraph\"><strong>Chicken Broth \u2013<\/strong> Vegetable broth, beef broth, or just water can also work. But for an extra creamy soup, replacing some or all of the milk with cream would be delicious. You could also substitute a dairy free milk if needed.<\/p>\n<p class=\"wp-block-paragraph\"><strong>Sea Salt &amp; Pepper<\/strong><\/p>\n<p class=\"wp-block-paragraph\"><strong>Seasonings \u2013<\/strong> My go-to is to add an Italian seasoning blend but feel free to get creative with the spices you add.<\/p>\n<p class=\"wp-block-paragraph\"><strong>Dried or Fresh Kale or Nettle \u2013<\/strong> I love to add some dried or finely chopped fresh greens to my potato soup for the color and added nutrients but this is completely optional.<\/p>\n<p class=\"wp-block-paragraph\"><strong>Shredded Cheddar Cheese \u2013<\/strong> Again optional but recommended for garnishing.<\/p>\n<h2 class=\"wp-block-heading\">How to Make Creamy Sausage and Potato Soup<\/h2>\n<p class=\"wp-block-paragraph\">Brown sausage and set aside. In fact, I prefer to make soups a day or two before we intend to eat them. This allows all of the flavors to meld together and just enhances the taste in my opinion.
