One day, I walked into the kitchen to smell the most delicious smell. \u201cWhat are you cooking?\u201d I asked. \u201cOh, I\u2019m just roasting some tomatoes,\u201d she casually replied.<\/p>\n<p class=\"wp-block-paragraph\">That simple conversation changed the trajectory of my tomato usage forever.<\/p>\n<p class=\"wp-block-paragraph\">Have you ever had roasted tomatoes? Roasting brings out a depth of flavor that you just don\u2019t get by slow cooking. Added sweetness with some caramelization. That became my new favorite tomato sauce recipe to can and preserve enough for the year ahead.<\/p>\n<p class=\"wp-block-paragraph\">Then, it was time to experiment with roasted tomato soup.<\/p>\n<h2 class=\"wp-block-heading\">Creamy Roasted Tomato Soup Ingredients<\/h2>\n<p class=\"wp-block-paragraph\">The beauty of this recipe is that there is a lot of flexibility with it. If you are an exact recipe follower, I encourage you to play around with this one. Use what you have and even resist the urge to measure. I\u2019ve made this roasted tomato soup with giant heirloom varieties down to small cherry tomatoes and everything in between. Dairy free? An unsweetened non-dairy milk would also work well!<\/p>\n<h2 class=\"wp-block-heading\">How to Make Creamy Roasted Tomato Soup<\/h2>\n<p class=\"wp-block-paragraph\">Begin by placing your tomatoes on a rimmed cookie sheet or 9&#215;13 baking pan. The timing here is dependent on the size of tomato you are roasting. Larger tomatoes will need 45 minutes \u2013 1 hour. Cherry tomatoes or something similar may be done in 20-30 minutes.<\/p>\n<p class=\"wp-block-paragraph\">While the tomatoes are cooking, mince your garlic and chop your onion.<\/p>\n<p class=\"wp-block-paragraph\">Saut\u00e9 the onion and garlic over med-high heat until soft. If you use an immersion blender or standard blender, you will likely still get the gritty tomato peels in your soup.<\/p>\n<h3 class=\"wp-block-heading\">Are tomato peels toxic?<\/h3>\n<p class=\"wp-block-paragraph\">In our age where there is so much information out there, this has become somewhat controversial.<\/p>\n<p class=\"wp-block-paragraph\">I wouldn\u2019t go as far as saying tomato peels are toxic. In fact, they are edible and full of nutrients. However, there may be some compounds in tomato skins that can be problematic. In fact, <a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S0023643813002661#:~:text=Several%20studies%20have%20already%20shown,Toor%20and%20Savage%2C%202005).\" target=\"_blank\" rel=\"noreferrer noopener\">studies<\/a> have shown that there are more nutrients and antioxidant activity in the skins than in the pulp of the tomatoes.<\/p>\n<p class=\"wp-block-paragraph\">In our family, because we do not get any sort of digestive distress from eating tomatoes with the skins on them, we prefer to keep them on for the added benefits that the skins provide.<\/p>\n<p class=\"wp-block-paragraph\">However, if tomatoes do give you digestive issues, you may want to try removing the skins to see if that helps.<\/p>\n<h3 class=\"wp-block-heading\">Can you can this creamy roasted tomato soup for long term use?<\/h3>\n<p class=\"wp-block-paragraph\">It is not recommended to can anything with dairy in it so we don\u2019t can it for long term use. However, an easy work around is to make and can this easy <a href=\"https:\/\/fromscratchfarmstead.com\/sugar-free-tomato-sauce\/\" target=\"_blank\" rel=\"noreferrer noopener\">roasted tomato sauce<\/a>. Then all you need to do to transform the roasted sauce into soup is to add milk or cream and seasonings.<\/p>\n<div id=\"recipejump\"><\/div>\n<h2 class=\"wp-block-heading\"><strong>Creamy Roasted Tomato Soup Recipe<\/strong><\/h2>\n<h4 class=\"wp-block-heading\">Yield: Approximately 7 Cups<\/h4>\n<h3 class=\"wp-block-heading\" style=\"font-size:22px\"><strong>Ingredients:<\/strong><\/h3>\n<p class=\"wp-block-paragraph\" style=\"font-size:22px\">&#8211; Tomatoes (Enough to fill the bottom of a 9&#215;13 pan in a single layer, roughly 4-6 cups)<br \/>&#8211; 1 Onion, diced<br \/>&#8211; 2 cloves garlic, minced<br \/>&#8211; 1 tsp salt<br \/>&#8211; 1.5 cups milk or cream<br \/>&#8211; 1 tsp Italian seasoning<\/p>\n<h3 class=\"wp-block-heading\" style=\"font-size:22px\"><strong>Directions:<\/strong><\/h3>\n<p class=\"wp-block-paragraph\" style=\"font-size:22px\">1. Place tomatoes in a single layer on a rimmed cookie sheet or 9&#215;13 baking pan. For larger tomatoes, cut them into 1-2\u201d chunks.<\/p>\n<p>2. Roast at 400\u00b0F (200\u00b0C) for 30-45 minutes. Smaller tomatoes will need less time than larger ones.<\/p>\n<p>3. While tomatoes are cooking, saut\u00e9 garlic and onion until soft then set aside.<\/p>\n<p>4. Once tomatoes are aromatic and the tops are slightly browned, remove from oven.<\/p>\n<p>5. Scoop tomatoes (with tomato juice), onions, and garlic into the container of a high-powered blender or food processor.<\/p>\n<p>6. Once smooth and creamy, pour into a saucepan.<\/p>\n<p>7.
