Growing up, my sister and I did swim team for several summers which meant early morning practices. When we got home, our wonderful babysitter would make us breakfast. Every day my sister asked for scrambled eggs while my daily request was toast with cinnamon and sugar.<\/p>\n<p class=\"wp-block-paragraph\">When we\u2019d go to a restaurant, everyone else would get an omelet or something similar and I\u2019d get the sweetest thing on the menu\u2014usually some sort of stack of pancakes, the more chocolate chips and whipped cream the better.<\/p>\n<p class=\"wp-block-paragraph\">But after our own <a href=\"https:\/\/fromscratchfarmstead.com\/how-to-recover-from-hypothalamic-amenorrhea\/\" target=\"_blank\" rel=\"noreferrer noopener\">health issues<\/a> came up, I began doing a deep dive into nutrition. I realized starting the day off with a plate or bowl full of sugar or carbohydrates was probably not the best idea.&nbsp;<\/p>\n<h2 class=\"wp-block-heading\">Blueberry Oat Pancakes to The Rescue<\/h2>\n<p class=\"wp-block-paragraph\">Now, almost everyday starts out with eggs for everyone in our family. But sometimes a change of pace is needed. Our favorite brand is the Certified Gluten Free <a href=\"https:\/\/amzn.to\/3YHMSoi\" target=\"_blank\" rel=\"noreferrer noopener\">One Degree Oats<\/a> that we purchase at Costco.<\/p>\n<p class=\"has-theme-palette-8-background-color has-background wp-block-paragraph\" style=\"font-size:20px\"><strong>Tip:<\/strong> <em>For added protein, you could swap \u00bc cup of oats for unflavored protein powder if you\u2019d like.<\/em><\/p>\n<p class=\"wp-block-paragraph\"><strong>Baking Powder \u2013<\/strong> Look for <a href=\"https:\/\/amzn.to\/4dMxuLz\" target=\"_blank\" rel=\"noreferrer noopener\">aluminum free baking powder<\/a>. Resist the urge to keep blending. An overmixed batter can lead to more dense pancakes instead of the fluffy texture we are going for.<\/p>\n<p class=\"wp-block-paragraph\">Let batter rest for around 10 minutes to thicken. (This step isn\u2019t completely necessary if you\u2019re in a hurry but it helps to get a fluffier pancake.)<\/p>\n<p class=\"wp-block-paragraph\">Melt 1 tbsp of coconut oil or other fat of choice on large pan or griddle.
