Neither Jim or I grew up with this homestead life and I\u2019d never seen anyone can anything in my life. It had been on my list of skills that I wanted to learn for a while but the canning process always felt too intimidating. I had no idea where to begin.<\/p>\n<p class=\"wp-block-paragraph\">That summer we grew our first very large garden. And so, with a 2-year-old and a 1-month-old infant in tow, I watched videos, read tutorials, purchased a <a href=\"https:\/\/amzn.to\/3VnPPHe\" target=\"_blank\" rel=\"noreferrer noopener\">pressure canner<\/a>, and canned my first batch of <a href=\"https:\/\/fromscratchfarmstead.com\/sugar-free-tomato-sauce\/\" target=\"_blank\" rel=\"noreferrer noopener\">tomato sauce<\/a>.<\/p>\n<p class=\"wp-block-paragraph\">To my surprise, it wasn\u2019t hard at all!<\/p>\n<h2 class=\"wp-block-heading\">Pressure Canning Vs. Water Bath Canning<\/h2>\n<p class=\"wp-block-paragraph\">The water bath method is usually where most people start with canning. It\u2019s a great way to preserve many fruits and vegetables. However, if you want to preserve meat of any kind, it must be pressure canned.<\/p>\n<p class=\"wp-block-paragraph\">I actually started by learning how to pressure can, so that\u2019s what I always do. This might include things like roasted veggies, <a href=\"https:\/\/fromscratchfarmstead.com\/dutch-oven-spanish-rice\/\" target=\"_blank\" rel=\"noreferrer noopener\">rice<\/a>, <a href=\"https:\/\/fromscratchfarmstead.com\/egg-muffin-cups\/\" target=\"_blank\" rel=\"noreferrer noopener\">egg casserole<\/a>, <a href=\"https:\/\/fromscratchfarmstead.com\/the-best-soaked-and-baked-oatmeal-gluten-free\/\" target=\"_blank\" rel=\"noreferrer noopener\">baked oatmeal<\/a>, <a href=\"https:\/\/fromscratchfarmstead.com\/blueberry-blender-muffins\/\" target=\"_blank\" rel=\"noreferrer noopener\">muffins<\/a>, and of course a big pot of <a href=\"https:\/\/fromscratchfarmstead.com\/creamy-southwest-chicken-soup\/\" target=\"_blank\" rel=\"noreferrer noopener\">soup<\/a> or <a href=\"https:\/\/fromscratchfarmstead.com\/butternut-squash-chili-slow-cooker\/\" target=\"_blank\" rel=\"noreferrer noopener\">chili<\/a>.<\/p>\n<p class=\"wp-block-paragraph\">I realized that it\u2019s really no harder to triple or quadruple what I\u2019m already making. This is our go to <a href=\"https:\/\/fromscratchfarmstead.com\/butternut-squash-chili-slow-cooker\/\" target=\"_blank\" rel=\"noreferrer noopener\">homemade chili<\/a> but we like to adapt it based on what\u2019s in the garden and the vegetables we have on hand. Our <a href=\"https:\/\/fromscratchfarmstead.com\/butternut-squash-chili-slow-cooker\/\" target=\"_blank\" rel=\"noreferrer noopener\">recipe<\/a> includes ground beef, dry beans (black beans), chili powder, and tons of goodness from the garden like canned tomato sauce, bell peppers, garlic, onions, dry beans, carrots, and winter squash.<\/p>\n<figure class=\"wp-block-embed is-type-video is-provider-youtube wp-block-embed-youtube wp-embed-aspect-16-9 wp-has-aspect-ratio\">\n<div class=\"wp-block-embed__wrapper\">\n<iframe loading=\"lazy\" title=\"How We BATCH COOK + PRESERVE FOOD to Make Mealtime Easier!\" width=\"720\" height=\"405\" src=\"https:\/\/www.youtube.com\/embed\/QCFj81pwvnk?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" referrerpolicy=\"strict-origin-when-cross-origin\" allowfullscreen><\/iframe>\n<\/div>\n<\/figure>\n<p class=\"has-theme-palette-8-background-color has-background wp-block-paragraph\" style=\"font-size:20px\"><em><strong>*Note:<\/strong> Be sure to read the manual for your specific canner to ensure safe home canning! This is not a certified canning recipe, just what we\u2019ve always done. Be sure to do your own research when canning.<\/em><\/p>\n<p class=\"wp-block-paragraph\">We set aside what we want for a meal that day and serve it up with our <a href=\"https:\/\/fromscratchfarmstead.com\/how-to-make-cultured-cream\/\" target=\"_blank\" rel=\"noreferrer noopener\">homemade sour cream<\/a> and shredded <a href=\"https:\/\/fromscratchfarmstead.com\/easy-farmhouse-cheddar-hard-cheese-recipe\/\" target=\"_blank\" rel=\"noreferrer noopener\">cheddar cheese<\/a>.<\/p>\n<p class=\"wp-block-paragraph\">The rest of the hot chili is ladled into sterilized canning jars. Place jars in your pressure cooker on top of the rack that comes with the canner.<\/p>\n<p class=\"has-theme-palette-8-background-color has-background wp-block-paragraph\"><em><strong>Tip:<\/strong> It\u2019s recommended to use brand new lids every time you can to ensure a proper seal. The bands and jars can be reused. But we\u2019ve always followed this advice on lids for the safest results.&nbsp;<\/em><\/p>\n<p class=\"wp-block-paragraph\">Fill the water with 3 quarts of warm water.&nbsp;<\/p>\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"800\" src=\"https:\/\/fromscratchfarmstead.com\/wp-content\/uploads\/2024\/06\/placing-jars-of-chili-inside-pressure-canner.jpg\" alt=\"placing jars of chili inside pressure canner\" class=\"wp-image-82643\" srcset=\"https:\/\/fromscratchfarmstead.com\/wp-content\/uploads\/2024\/06\/placing-jars-of-chili-inside-pressure-canner.jpg 1200w, https:\/\/fromscratchfarmstead.com\/wp-content\/uploads\/2024\/06\/placing-jars-of-chili-inside-pressure-canner-300x200.jpg 300w, https:\/\/fromscratchfarmstead.com\/wp-content\/uploads\/2024\/06\/placing-jars-of-chili-inside-pressure-canner-1024x683.jpg 1024w, https:\/\/fromscratchfarmstead.com\/wp-content\/uploads\/2024\/06\/placing-jars-of-chili-inside-pressure-canner-768x512.jpg 768w\" sizes=\"auto, (max-width: 1200px) 100vw, 1200px\" \/><\/figure>\n<p class=\"wp-block-paragraph\">Secure the lid of your pressure canner and place it on your stove on high heat.<\/p>\n<p class=\"wp-block-paragraph\">Let everything heat up and the steam begin to build. Once it reaches a certain amount of pressure a little button on the lid called the air vent will pop up. This is measuring the amount of pressure building up inside the canner in pounds per square inch, or PSI.<\/p>\n<p class=\"wp-block-paragraph\">Home-canned chili requires 11 pounds of pressure. Once your canner reaches 11 psi, you want to keep the pressure from continuing to rise and, instead, hold it steady at that amount of pressure for a processing time of 90 minutes for quart jars and 75 minutes for pint jars. Don\u2019t forget to set a timer for this!<\/p>\n<p class=\"wp-block-paragraph\">To do this, turn the heat down on your stove. It takes some observing at first. If the pressure continues to build, turn the heat down slightly. However, You want to keep the pressure from dipping below that 11 psi.<\/p>\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"675\" src=\"https:\/\/fromscratchfarmstead.com\/wp-content\/uploads\/2024\/06\/11-psi-for-canning-chili.jpg\" alt=\"11 psi for canning chili\" class=\"wp-image-82633\" srcset=\"https:\/\/fromscratchfarmstead.com\/wp-content\/uploads\/2024\/06\/11-psi-for-canning-chili.jpg 1200w, https:\/\/fromscratchfarmstead.com\/wp-content\/uploads\/2024\/06\/11-psi-for-canning-chili-300x169.jpg 300w, https:\/\/fromscratchfarmstead.com\/wp-content\/uploads\/2024\/06\/11-psi-for-canning-chili-1024x576.jpg 1024w, https:\/\/fromscratchfarmstead.com\/wp-content\/uploads\/2024\/06\/11-psi-for-canning-chili-768x432.jpg 768w\" sizes=\"auto, (max-width: 1200px) 100vw, 1200px\" \/><\/figure>\n<p class=\"wp-block-paragraph\">I never stray too far from my kitchen when canning chili for long term storage to ensure it is done safely.<\/p>\n<p class=\"wp-block-paragraph\">When your timer goes off, remove your pressure canner from heat. We never remove the weight right away but let it naturally cool down and release pressure.<\/p>\n<p class=\"wp-block-paragraph\">After the air vent button has gone down, remove the weight and the lid of the canner. It was a great place to start for a beginner canner and years later, is still working perfectly! The great thing about this is you can get started with very little cost investment.
