As soon as the apples begin to ripen on our trees, this recipe immediately comes to mind. The combination of cinnamon with sweet potatoes and apples paired with the sausage is the most delicious blend of sweet and savory.<\/p>\n

We love this time of the year on our homestead because almost all of our meals come from just harvested fruits and veggies. This sweet potato apple hash is no exception. Although, this recipe has been a favorite in our home long before we had a homestead or were growing our own food, it makes it all the better with freshly picked produce!<\/p>\n

As a busy family with young kids, life feels about as full as full can be. But as we\u2019ve delved down this from scratch, homestead life, time and time again we realize how just a few homegrown, flavor filled raw ingredients cooked together make the absolute best meals.<\/p>\n

Apples \u2013<\/strong> We picked Cortland apples straight off of our tree but any fresh eating or cooking variety of apple will work well in the recipe. We like to dice the apples in small chunks so that they incorporate in small bits throughout the hash.<\/p>\n

Sweet Potatoes \u2013<\/strong> Fresh, orange sweet potatoes are our favorite in this hash. However, you could definitely substitute winter squash or carrots for the sweet potatoes in the recipe. White potatoes are delicious too, it just gives the dish a significantly different flavor profile.<\/p>\n

Onions \u2013<\/strong> No hash is complete without onion in my opinion; adding the perfect flavor to compliment the sweet potatoes and apple. I\u2019d definitely favor dicing a real onion for both the taste and texture that it adds and not opting for onion powder.<\/p>\n

Greens \u2013<\/strong> When we began making this recipe several years ago, I always used spinach in my sweet potato apple hash. Spinach has such a mild flavor and texture that it goes really well. Since moving onto our homestead, we have an abundance of nettle<\/a>. Now, nettle is our go-to green with this hash. It cooks down and tastes very similar to spinach. Alternately, you could add kale or a more bitter green but it will alter the taste and stand out more in the dish than spinach or nettle does.<\/p>\n

Sausage \u2013<\/strong> We love to use a maple sage breakfast sausage in this sweet potato apple hash. It\u2019s important to check the ingredient label on the sausage you purchase from your local store, farm or butcher. Sausage often has nasty ingredients such as corn syrup solids, \u201cnatural flavorings\u201d, or other sugar derivatives. If you can\u2019t find a solid sausage option, it\u2019s surprisingly easy to make yourself<\/a>! With ground pork and a bit of sage, maple syrup, and a few other simple ingredients, you can make your own breakfast sausage in no time.<\/p>\n

If sausage isn\u2019t your jam, you could always substitute bacon, turkey sausage, or even chicken or salmon.<\/p>\n

Cinnamon \u2013<\/strong> Cinnamon is completely optional in this recipe but I love the flavor it brings out! There\u2019s just something about apples, sweet potatoes, and cinnamon that were made for each other! You can also feel free to experiment with adding other herbs.<\/p>\n

How to Make Apple Sweet Potato Hash with Greens and Sausage<\/h2>\n

This recipe easily comes together in less than an hour. It also works great to make in advance and reheat when you are ready!<\/p>\n

Start by chopping your sweet potatoes in roughly \u00bd inch chunks.<\/p>\n

Roast them in a single layer on a greased pan in the oven at 450\u00b0F for 25 minutes.<\/p>\n

While sweet potatoes are cooking, dice onion.<\/p>\n

Saut\u00e9 onion over medium to high heat in a large skillet (we prefer a 12\u201d cast iron pan<\/a>) with a heat stable cooking fat of choice (we like to use lard<\/a> for this). <\/p>\n

Once onion is fragrant, about 2-3 minutes, add your breakfast sausage.<\/p>\n

Cook onion and sausage together until onion is fully cooked and sausage in browned.<\/p>\n

Once sweet potatoes are fork tender, remove from oven and add them to the skillet of onion and sausage. Mix together.<\/p>\n

Then add a diced apple and greens.<\/p>\n
